Sweet Grass Diary Thomasville Tomme Cheese

A farmhouse table cheese made in the style of a French (Pyrenees) Mountain Tomme named for our hometown. Released for sale between 60-90 days. It has a natural rind, a semi-soft texture and subtle grassy flavors.

“Tomme” (pronounced “TOM” or “TOME”) is a term for a family of cheeses produced on farms in the French and Swiss Alps using a herd's extra milk, and named after the local town. Tommes are typically rustic, accessible, and versatile. Use it like a ‘table cheese’ – in any situation which calls for a bit of cheese. Thomasville Tomme follows this tradition, but on U.S. soil. It’s a mild but flavorful wheel of “use it for anything” cheese named after its town, Thomasville, Georgia. The farm’s location is extremely unique: cows can stay on pasture 365 days per year due to good water supply and mild winters. This cheese is truly grass-fed, all year long. Aged for 2-3 months, this cheese is semi-firm, with grassy, buttery flavors. Its natural rind smells like mushrooms and buttermilk. Delicious enough for a special cheese board, or grating into your favorite cheesy dish – Thomasville Tomme will become a staple in your fridge.
