A lightly ripened goat cheese, Bonne Bouche is inspired by the ash-covered cheeses of the Loire Valley in France. This Vermont-made version is dense and tangy, or gooey and soft depending on its age.

Bonne Bouche (which means 'good mouth(ful)' in French) will make your mouth feel good alright. This cheese is a sight and taste to behold. The oh-so delicate rind is grey, fuzzy, and wrinkled. Though the rind and wooden box may be intimidating to some, those who persist will find the mild rind melts in the mouth, paper-thin. It surrounds a dense interior of goat cheese, varying in texture depending on its age. When young, it can be sliced into bites with a velvety chew. If you let it sit around awhile, the center will become miraculously gooey and soft. The flavors are tangy, clean, and fresh. Made in the lush state Vermont, this goat cheese does just what it should: remind you of Spring, happy goats, and fields of vivid green grass. It might make you feel a little fancy too.
