Concentrated Vegetable Paella Broth

Created in collaboration with chef and paella master Rafa Margos, who has made more than 300,000 paellas over the course of 25 years, this vegetable broth is Vegan Certified by the European Union. The vegetables are first wood-fired at maximum heat to extract maximum flavor, then slow-cooked in water over a wood fire for 90 minutes before resting on the embers for an additional 30 minutes—infusing the broth with a distinctive Valencian smokiness. The end result is wonderfully complex and ready to use when you're ready to cook.
