This famous cheese is instantly recognizable by the distinct black line running through the center of each wheel. Made of flavorless vegetable ash, the line is more a nod to tradition these days than strictly necessary. After the FDA banned its import into the US, the beloved cheese is back again as of late 2024. Slightly funky and fruity, this firm cheese has a smooth, supple texture, and a creamy profile. Produced by Jean Perrin, this Morbier is the result of ancestral knowledge and crasftsmanship from the Jura region of France. The strict rules of manufacture and maturation respect the pure regional Franche-Comté traditions. An excellent melting cheese, try it in warm dishes like fondue or raclette, or simply with fruit and baguette served at room temperature. Try with wines made in the same region of France, like Jura Reds, Savagnin, or a light bodied Pinot Noir or Gewürztraminer.
