Proscuitto di Parma is a traditional raw Italian ham that is typical cured by dry salting the pork thighs. Martello Bros only uses leg coming from certified pigs bred in compliance with the rules established by the Parma Ham Consortium, with the right salting and without any additives. In 1959 the Martelli brothers began their business by slaughtering their first 25 pigs and it involved the entire Martelli family, the 5 brothers, their wives and even their young children. Now many decades later Martelli has 7 production units and slaughters 700,000 pigs per year in order to produce a complete range of meats, which are guaranteed thanks to many hygiene checks, DOP (PDO) regulations and certifications. The Prosciutto is produced in 3 plants exclusively in the province of Parma.
Prosciutto is a great appetizer just on its own, or combined with fresh fruit; its a wonderful variety on your sandwich, in your pasta or on your pizza.
