Naked Goat is a fabulous 6-month-aged goat cheese from Spain produced with Murciana goats milk. This breed of goat's milk is higher in fat and protein and contributes to the incredible richness of the cheese. Producer Central Quesera Montesinos is an expert in goat's milk cheese. The dairy began as a smaller dairy in Jumilla and is now one of Spains top producers. Together with Forever Cheese, they have worked to make the regions Murciana goats milk cheeses the countrys best. Naked Goat has a smooth, pale yellow rind. The cheese is milky white with very small eyes throughout the paste. Overall, the flavor starts off creamy and mild. The sweet and tangy finish becomes more pronounced with age. Its an ideal introduction to goat cheese, and also great for melting.
