When making marmalade, jam and jellies, you'll need pectin; it is the gelling agent that thickens and stabilizes when added to fruits; it gives structure to your preserves. In order for pectin to gel a specific quantity of sugar is required. Other than preserves, pectin powder can also be used in low-fat baked goods as a fat substitute.
