This hallowed British cheese is a favorite of long time cheese lovers. This crumbly gourmet cheese is the oldest-known cheese from England, and the predecessor to modern-day cheddar. It is dense, mildly salty, yellow-orange in color and has a slightly tangy flavor. Cheshire is made using vegetarian rennet and pasteurized cow's milk and is ripened for 2-3 months.

Cheshire Cheese is produced in the English counties of Cheshire and the neighboring four counties of Denbighshire, Flintshire, Shropshire and Staffordshire. Reputed to have been made since Roman times, the cheese is also mentioned in the Domesday Book of the 11th century.

One of its defining features is the crumbly texture. Try it as a snack, crumbled over salad, or on a cheese board. Try a simple fruity Pinot Noir from either California or Burgundy. For a white, try an oaky Chardonnay, steely Alsatian Riesling, or a fruity Sauvignon Blanc. A Pale Ale is a good match to Cheshire as well.
