Founded by a former engineer, Jean-Claude Guilloteau, who came up with a unique process to produce delicious cheeses in the traditional style but even smoother and with a delicate, thin rind that has gained worldwide acclaim. The name of their signature brand Fromager 'd'Affinois' is a play on words between the Dauphine region where the dairy is located and the last cheese making stage: the affinage.
