This Danish cheese turns up the volume on the flavors of regular havarti through an aging process of over a year. The secret to the cheese’s delicate crystalline texture and subtle crunch is the small white spots you may notice on and in the cheese. Castello Aged Havarti is aged for 12 months to encourage the formation of these unique and delicious crystals, creating a texture similar to that of well-matured cheeses such as Parmigiano Reggiano, matured cheddar or aged gouda. Both are proof of a carefully matured and creatively crafted cheese. Castello Aged Havarti is great on its own or with thin apple slices. The cheese also pairs well with honey, chutney, or fruit. It is delicious in thin shavings on top of grilled asparagus and green vegetables.
