After being individually hand made, cloth bound and pressed they are are coated in butter to seal the cheese and then are slowly matured for a period of 6 months. The cheese has a vibrant dark orange colour and a wonderful sweet nutty flavour. Cheesemonger's Note: The rind of a clothbound cheeses is usually brown and very fragrant, and can sometimes vein into the cheese in small areas. This is normal.

Long Clawson has been making cheese since 1912. Using milk collected daily from their own farms, they make one of the finest examples of aged Red Leicester. After being individually hand made, cloth bound and pressed they are are coated in butter to seal the cheese and then are slowly matured for a period of 6 months. The cheese has a vibrant dark orange color and a wonderful sweet nutty flavor. Because of the long aging period, this cheese is drier and harder than younger, moister versions.
Please note - whole wheels will come wrapped in the original cloth used for aging. The black and gray mold on the cloth and rind is normal and will permeate the outside edges of the cheese. This is part of the aging and flavor development process and makes for delicious cheese inside.
