North Carolina has emerged as a leading state in American artisanal cheese production. From that lush state comes Calvander, from Chapel Hill Creamery. This small family owned farm allows their herd of Jersey cows to wander the 37 acres and feed on fresh grass, when the weather allows. Since 2000 the farm has also been a farmstead cheese operation, making small batch cheeses like Calvander. This cheese is inspired by Italian favorite asiago and serves as a perfect table cheese to use around the house for almost any use. The cheese tastes buttery, with nutty notes and a slight tang. It ages for 7 months and becomes more piquant as it matures.
