Moliterno al Tartufo’s base is a bold pecorino. Made on the island of Sardinia, each wheel is aged until the cheese becomes firm and the flavors intensify. Though firm, the texture is moist and when at room temperature, almost shimmers from the richness of high-fat sheep’s milk. The flavors are prominently sheepy, fatty and salty with savory notes of umami and a piquant flavor which will tingle on some palates.
To really send it over the edge, each wheel is injected with black truffle paste which creates a striking marbled appearance in each slice. There’s no shyness or subtlety here: the truffle is prominent, infusing every bite with intoxicating fragrance and flavor.
