For cooking, a lesser grade Gruyere might do. But for eating straight, this Gruyere will outshine most others, allowing a depth of flavor to come through and impress even the most seasoned cheese eater. Gruyere is a classic cheese from Switzerland, usually without holes, best known for melting in dishes like fondue, or over French onion soup.
