Idyllweiss has the flavor of a bright goat cheese, but some extra indulgence. Goat's milk is very low in fat, which makes it perfect for light and refreshing cheese. But sometimes we crave the same grassy flavors with a little richness. That's where Idyllweiss comes in. It's a puck-shaped goat cheese combined with cow cream, which gives it a more buttery flavor than if made with goat milk alone. It is sweet and delicate when young, and develops a touch of intensity as it ages. A great showpiece on a cheese board, it's also good for the goat-questioning, as it's mixed with more neutral cow's milk. Try with sweet jams or honey, cured meats and salad, or with a strong beverage of your choice. Whites, bubbles, and lighter reds all work well.
