Livradois French Raclette Cheese
Designed to be melted, raclette cheese is typically used to make the dish called raclette. This one is made in France with unpasteurized milk - an authentic embodiment of this classic cheese.
Raclette may be the world's most famous melting cheese, and deservedly so. It's made in the Savoie region of the Alps, in Switzerland and in France. Our French Raclette cheese is made of unpasteurized cow's milk and matured for at least 5 months in respect to the French tradition. It's during this long ripening period that the flavor and excellent melting qualities develop. French Raclette has a semi-soft interior dotted with small holes and a rosy colored sticky rind. Melted, it tastes creamy and savory, like roast meat and butter. This French gourmet cheese is more aromatic than its Swiss cousin.It is used to make a dish, which also goes by the name 'raclette', served with boiled potatoes, pickles, and cured meats. The emphasis in Raclette dining is always on sociable eating and drinking.
Cheesemonger's Note: This cheese can have a moist, pungent rind, which is normal. After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.
