Firefly Farms Merry Goat Round Cheese

Merry Goat Round is a soft-ripened goat cheese, the best seller from FireFly Farm. Soft-ripened means it’s not fresh, but given a short time to age, long enough to form a rind and more complex flavors. The interior is soft when young, but matures into an ooey gooey texture so that it must be contained with a strip of sturdy bark to prevent it from running. When young the cheese is mild with a pleasant tang. At ripe, it has lactic mushroomy flavors. Because of the gooey interior and bark rind, it’s not meant to be cut but scooped from the top with a spoon, or dipped into with a cracker. Try it baked at 350 degrees until soft and warm, and top with jam or honey and dig in.
