Jean Perrin Secret de Scey Cheese

Secret de Scey is a cheese made in the style of French classic Morbier, but with pasteurized milk instead of raw milk. The pasteurization prevents it from earning the name Morbier AOC, however the recipe is the same.

Cheesemonger's Note: After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.

The two layers of the cheese classically represent two herd milkings per day: once in the morning and once in the evening. The morning milk is made into cheese and makes up the bottom layer, and the evening milk’s cheese makes the second layer. The two layers are traditionally separated by a line of vegetable ash. Secret de Scey is a truly funky cheese with a pungent rind and bold flavor. The cheese is supple and rich tasting, with the flavors of meat and fruit.

This is a rustic country style cheese from the gentle mountains in the East of France near the Swiss border. It’s best served with other foods that could be found on a country farm table. Try with crusty bread, fresh fruit, and perhaps a farmhouse saison.
