The Smokin Goat is made with this Majorero milk, which is naturally high in fat and protein and it gives the cheese a creamy, elastic texture. It is naturally smoked over beech wood, a week after production. It is mild, aged for about 2 weeks and the light smokey taste doesn’t overpower the flavor of the cheese.
Cheesemonger's Note: The rind can feature spots of white mold - this is normal.
