Spain’s cuisine is known for its regional specialties. Head over to Zamora, Spain and find what else? A cheese called Zamorano of course – aka “the cheese from Zamora”. Similar in appearance to its more-famous cousin Manchego, Zamorano DOP is also made using sheep’s milk. It’s aged for 6 months and given a similar basket-weave rind, and rubbed in olive oil. This cheese is a D.O. protected cheese and must be made with the raw milk of two sheep breeds only: Castilian and Churr – hardy types native to this part of Spain. Manchego-lovers will find familiarity yet new delight in Zamorano. Slightly sweet and nutty, the cheese has a salty note all its own. The texture is also more smooth than Manchego’s coarse rugged nature. Zamorano finds a perfect place among tapas, or on a cheese board. Pair with Jamon Iberico or Serrano for a classic combination.
