Grana Padano is an ancient cheese from the Po River Valley in Northern Italy. It is a PDO cheese, meaning its Protected Designation of Origin dictates where and how it can be made according to tradition. Like its cousin Parmigiano Reggiano, it’s made with raw cow’s milk which is crafted into huge 80 pound wheels, and then aged at least 9 months. The flavors are of tropical fruit and toasted nuts. It’s perfect for use in many traditional Italian dishes, or grating over pasta, salads, soups and in countless other dishes.
