English Clotted Cream

A silky, golden-yellow cream made by allowing unpasteurized cow’s milk to sit for 12-24 hours in shallow pans, then slowing heating it and leaving it to cool for another 12-24 hours. The cream that rises to the surface and “clots” is skimmed off and served with scones, berries, or desserts.

Genuine Devon Clotted Cream is a delicacy made in Devon or Devonshire in South West England. Clotted Cream is a dense cream with a butterfat content of 55%, which is much higher than regular heavy cream, and thus much thicker and richer. Traditionally made by heating cow's milk and leaving it in shallow pans to cool slowly, when the cream rises to the top and forms "clots", hence the name. This genuine Devon Clotted Cream can be spread on scones or muffins or spooned onto warm apple pie, and it is an essential part of the traditional cream tea.
