Cropwell Bishop Blue Stilton Cheese
Often referred to as 'The King of Cheese', Stilton is one of the world's greats, with only six creameries in the world permitted to produce the cheese. Blue Stilton has acquired Protected Designation Origin status and can only be made in Leicestershire, Nottinghamshire and Derbyshire using milk exclusively farmed from the same three counties of England.

Blue Stilton has acquired Protected Designation Origin status and can only be made in Leicestershire, Nottinghamshire and Derbyshire using milk exclusively farmed from the same three counties of England. Cropwell Bishop Creamery's award winning Blue Stilton becomes milder and mellows with age and a little more crumbly, making it a perfect introduction to blue cheese. The cheese is drum-shaped with a thick, hard crust which is usually grayish-brown and slightly wrinkled with whitish powdery patches. The interior of the cheese is soft, rich and creamy but still has that distinctive blue cheese tang. Like any other cheese, serve Blue Stilton at room temperature, with crackers or bread and pair it with a glass of Shiraz. Another classic pairing is after-dinner Stilton with a glass of Port.
Cheesemonger's Note: This cheese has a natural mold rind of brown or orange, with spots of white, blue, grey, and green mold.
