A lightly ripened goat cheese, Bonne Bouche is inspired by the ash-covered cheeses of the Loire Valley in France. This Vermont-made version is dense and tangy, or gooey and soft depending on its age.
Cheesemonger's Note: This rind is wrinkly and soft with a dusting of dark grey.
