Briati Asiago Cheese
Asiago is in the grana family of cheeses (along with parmesan and pecorino romano). This cow’s milk cheese has a nutty bold flavor which is perfect sprinkled over pasta, salad, used in a risotto, sliced into sandwiches and burgers.
Asiago has an unmistakeably marked flavor, with a distinctive, slightly sharp taste. It is a semi-hard Italian-style gourmet cheese with a granular texture, is scattered with small to medium-sized holes and has a strawlike color. It is an excellent table cheese, that aged for minimally 9 months and can be eaten alone or with typical regional dishes.
