Brick cheese is an American original. The story goes that John Jossi, came to the states at a young age in from Switzerland with his parents mid 1800s. The family settled first in upstate New York, where Jossi was running a small Limburger factory.
During that time Jossi came up with the alternative way to make a cheese, a cheese that later became Brick cheese. Part of the alternative way was using bricks to press moisture out of the cheese, which of course was formed into a brick shape.
This New Bridge Brick cheese is made from cow's milk and has a sweet, mild flavor with a semi-soft texture with some aroma.
