Danish blue was created when Danish cheesemakers decided they wanted their own version of a blue like French Roquefort. Since then Danish Blue has been a favorite of blue lovers. Made with pasteurized cow's milk, this milky white cheese has a healthy distribution of blue veins and a relatively sharp taste. Danish blue is soft and easy to slice, but prone to crumbling. It's perfect on a green salad, burger, or on a cheese board. Pair it with a white wine or ice cold beer. Sweeter beverages create a nice complement to the salty flavors.
