Aged Piave DOP Cheese
An Italian classic, Piave Vecchio DOP. This Vecchio blue label version is aged for 10-12 months. Substitute for parmesan or enjoy on its own to savor its fruity, nutty flavor.
From the Veneto region of Italy comes Piave, a cheese of protected origin (PDO), or in Italian, Denominazione di Origine Protetta (DOP). Reminiscent of Parmigiano Reggiano, Piave could be called Parm’s softer-spoken cousin. The flavors are similar, but not so bold, and the texture is much smoother without the coarse crystallization of Parmigiano Reggiano. The consistency is hard and dense with a pleasant chew. Piave has a savory cooked milk flavor with a slight sweetness and a suggestion of tropical notes. Piave can be used for a wide variety of applications and is a good substitute for many hard Italian cheeses.
Piave is sold at various stages of maturity, but this one is the blue label 'vecchio' aged between 10-12 months.
