From the Veneto region of Italy comes Piave, a cheese of protected origin (PDO). Reminiscent of Parmigiano Reggiano, Piave could be called Parm’s softer-spoken cousin. The flavors are similar, but not so bold, and the texture is much smoother without the coarse crystallization of Parmigiano Reggiano. The consistency is hard and dense with a pleasant chew. Piave has a savory cooked milk flavor with a slight sweetness and a suggestion of tropical notes. Piave can be used for a wide variety of applications and is a good substitute for many hard Italian cheeses.
Piave is sold at various stages of maturity, but this one is the blue label 'vecchio' aged between 6-12 months.
