Mitica Toma Piemontese DOP Cheese
A rustic cheese from Northern Italy, made since Roman times. The supple, pudgy cheese has a natural rind and a flavor not strong, but layered of vegetal and woody notes.
Toma Piemontese is a DOP cheese in Italy - an ancient, region-protected cheese that is considered a true example of Italy’s cheese history. Rarely found outside Italy, Toma Piemontese is made in the Piedmont region only, from milk of cows grazing in mountains of the region. It’s aged just long enough to develop a rustic, natural rind, and some fascinating flavors. The flavors are milky and earthy, of mushrooms and woods. This cheese has all the flavor intrigue of a raw milk cheese, but is made with pasteurized milk. It’s perfect for an Italian-style cheese plate or antipasti, and served with red wines also from the Piedmont region. It can also be used in classic Italian recipes like risotto, pasta, egg dishes, potatoes and more.
Cheesemonger's Note: This rind often has spots of white, blue, or grey mold, which is normal. After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.
