Foxglove is a double-cream, washed-rind cheese. Its flavor is reminiscent of Taleggio meaty and salty, but with a buttery, sweet, fruitiness that rarely emerges on washed-rind cheeses.

Foxglove must be a work of genius. Unlike anything we've tried before, Foxglove is a double-cream (think buttery richness), washed-rind (think pungent and funky) cheese. The flavor is reminiscent of Taleggio - meaty and salty, but with a buttery, sweet, fruitiness that rarely emerges on washed-rind cheeses. This small square is very delicate, going from soft to super soft when very ripe. It's lip-smackingly good and truly unique.
If you enjoy Taleggio or Epoisses cheeses, the Indiana-made Foxglove cheese will delight you to no end.
Pair this stinker with a rye, stout beer or Moscato.
