
Mitica Pecorino Toscano DOP 6 Months Old Cheese
Different parts of Italy have their own version of "pecorino" - a sheep cheese, usually firm and used as a table cheese for just about everything. This is the Toscano version - originating from the small villages of Tuscany.
Cheesemonger's Note: the natural brown rind sometimes features a spot of white or grey mold - a normal part of the aging process. After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.

Pecorino Toscano DOP is an exemplary sheep’s milk cheese produced in the Val D’Orcia (Siena) Tuscany under strict supervision of the Consortium of Pecorino Toscano. The seal is burnt into the rind of the cheese. The 6 month Aged version is firm, rich and nutty with a lingering finish hinting of butterscotch. A variety of natural molds may be present on the rind, contributing wonderful aromas to the cheese.
