It is named after one of the first settlements in central North Carolina and may be the snow white color of the rind had some influence as well. The cow's milk used to make Snow Camp is sourced from a neighboring farm. This young cheese is bright, lactic and tangy. Over time the cheese softens and the flavors intensify, evoking creme fraiche, mushrooms and cultured butter. Each cheese is aged 4-6 weeks.
