This assortment includes:
Mimolette Cheese - a French gourmet cheese that is matured for 12 months, resulting in a very hard orange colored cheese with a slightly sweet, caramelized flavor.
Extra Sharp Cheddar - an Oregon cheddar that is aged for more than 15 months, resulting in a robust, complex flavored cheese.
Shropshire Blue - a famous British cheese much like Blue Stilton but with a gorgeous vivid yellow color to contrast the blue veins.
Apple Smoked Cheddar - A mild cheddar on the inside, this one's covered with paprika on the rind and smoked. Eat the rind or not, as you like - the cheese is still boosted by all that extra flavor.
