Mimolette Cheese - a French gourmet cheese that is matured for 12 months, resulting in a very hard orange colored cheese with a slightly sweet, caramelized flavor.
Extra Sharp Cheddar - an Oregon cheddar that is aged for more than 15 months, resulting in a robust, complex flavored cheese.
Shropshire Blue - a famous British cheese much like Blue Stilton but with a gorgeous vivid yellow color to contrast the blue veins.
Sartori MontAmore Cheddar Cheese - a sweet and fruity Parm-inspired cheese which finishes with a playful, tangy bite.
