Irish Sage delivers the creamy tang of a Cheddar with the herby, brothy notes of sage. Traditionally eaten at harvest time, Cheddar blended with sage has been eaten for hundreds of years. The delicate flavour should not be over-powered so, it would best be partnered by a straw-coloured Chardonnay. For a "romantic" pairing, matching the terroir of the grass-fed Cheddar, we would recommend an Irish Ale.
