Fermin Paleta Bellota is made from the front leg of the iberico pig, a native breed from Spain. During the Montanera season (from October through February), these free range pigs double their weight eating acorns and grass. This shoulder of the pig, sometimes referred to as 'shoulder ham' and called paleta in Spanish, is a true Iberian delicacy.
