Mimolette is a wonderfully fun cheese from the north of France. The wheel is perfectly round and the size of a cantaloupe, with a rough brown rind and vivid orange cheese inside. This one is aged 12 months so it's very bold. Sharp cheddar lovers will find this cheese surprisingly familiar.
