Sardinia is an island known for its sheep and wild horses. Cheesemakers on the island had mostly made various types of sheep cheese until the 1960s when goats were introduced to the rugged terrain. After 50+ years of climbing across the island, the island has its own breed of “Sardinian goat”, aka Capra Sarda. Pantaleo is made exclusively from the milk of Capra Sarda goats, and aged for at least 100 days. This aging process tempers any lingering goatiness to cultivate a balanced cheese with a smooth flavor. A cheesemonger favorite, this cheese has limited production and makes its way to the U.S. in very small quantities. Perfect for a cheese board, it can be paired with a glass of red wine like the Sardinians drink: think Cannonau or Vermentino. Pantaleo is an equally good cooking cheese, grated over salads or Italian dishes like risotto, pasta, pizza, minestrone, salads, etc.
