Istara Petit Basque Cheese
Made with 100% pure sheep’s milk, P’tit Basque is aged for a minimum of 70 days. Traditionally, shepherds made this small cheese from the leftover curd set aside after milking their ewes. One small wheel of P'tit Basque is approx. 1.5 pounds.
The size of this wheel also makes it perfect for serving with a Girolle, the cheese curling tool.
P'tit Basque is similar to its famous French cousin, Ossau-Iraty. The primary difference is its size: the entire wheel is only 1.5 pounds. This mini wheel makes an impressive centerpiece to a cheese board, a party, or simply at the center of a dinner table with a knife for nibbling.
P'tit Basque is mild and nutty, with the aroma of brown butter and caramel. Moist and smooth with savory notes, it makes a wonderful snacking cheese.
This cheese is a classic from the Basque region between France and Spain. The region has a unique culinary history influenced by both French and Spanish cuisine. Sometimes compared to Spain's famous Manchego, the similarities are limited to the sheep's milk and the basket-weave rind, though fans of Manchego will likely love this too.
