One of France's classic goat cheeses. Valencay is a beautiful pyramid-shaped cheese with a rustic blue-grey colored and wrinkled rind. It's made by the natural molds that form its rind, darkened with a dusting of charcoal. The young cheese has a fresh, citric taste.
