Zinfandel can be confusing, but we have selected 4 kinds of cheese that pair just fine with a full-bodied Zinfandel:
Aged Manchego Cheese (8 oz.) - relatively sweet and mild with a touch of salty nuts.
Taleggio (8 oz. or 1lb) - another Italian cheese, but this one is a washed rind, lovely soft when at room temperature, but a stinky one.
Clothbound Cheddar (8 oz. or 1lb) - an American classic, bandaged with muslin and skillfully aged 10-12 months at the Cellars at Jasper Hill, nearby Greensboro, Vermont.
Reypenaer (4.9 oz.) - Excellent Dutch Gouda; aroma and flavor are superb. Sharp and tangy.
