Valdeon is a bold blue from Spain made of both cow’s and goat’s milk. This cheese has been made for centuries in the Castilla y Leon region of Spain and is often compared to its even stronger cousin, Cabrales. Valdeon has a long finish of evolving flavor - spicy, earthy, sweet, tangy, salty, and more. The semi-firm texture has a healthy distribution of grayish blue mold.
