Mitica Blue Valdeon Cheese
Made with a mix cow and goat milk at the base of the Picos de Europa in Northern Spain. Milder than Cabrales, this creamy, medium strength blue is well balanced with earthy, tangy, and slightly spicy flavors.
Valdeon is a bold blue from Spain made of both cow’s and goat’s milk. This cheese has been made for centuries in the Castilla y Leon region of Spain and is often compared to its even stronger cousin, Cabrales. Valdeon has a long finish of evolving flavor - spicy, earthy, sweet, tangy, salty, and more. The semi-firm texture has a healthy distribution of grayish blue mold.
