Boxcarr Handmade Campo Cheese
A subtly funky cheese from North Carolina, lightly smoked over pecan wood, resulting in a silky smooth cheese, rich with savory notes and a hint of smoke.
From one of North Carolina's leading artisanal cheesemakers comes one of their best cheeses yet. Campo is made of cow's milk and gently smoked to create a silky rich cheese complemented by some savory notes. The rind is pink and slightly sticky with some pungency, hinting at the deliciousness inside. This cheese is a phenomenal melter, or a lovely addition to a cheese board. Certainly a cheese to stop and savor.
Cheesemonger's Note: Campo's rind is pinkish orange, sometimes sticky, pungent, and dappled with white mold. After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.
