Campo is made of cow's milk and gently smoked to create a silky rich cheese complemented by some savory notes. The rind is pink and slightly sticky with some pungency, hinting at the deliciousness inside. This cheese is a phenomenal melter, or a real show stopper on a cheese board. Certainly a cheese to stop and savor.
