
Boxcarr Handmade Lissome Cheese
Lissome is a big, beefy beer-laden semi-soft cow milk cheese taking inspiration from the funky Italian Taleggio. Lissome is washed for weeks in a Piedmontese beer and brine solution which promotes the bright orange rind. This creates a malty, rich creamy bite.
Cheesemonger's Note: Lissome's rind is pinkish orange, sometimes sticky, pungent, and may be dappled with white mold. After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.

Coming to you from North Carolina's cheese trail is Boxcarr Handmade Cheese's Lissome. Modeled after Taleggio, this is a washed-rind square with a creamy interior and a funky rind. Each “wheel” is made with local cow's milk before experiencing a beer and brine rinse during maturation. This washing process cultivates the pink sticky rind, which adds a meaty flavor to the supple cheese inside. Not too strong but surely flavorful, this is a good cheese for most palates.
This is a lovely cheese to pair with beer or a nice glass of wine, and a divine melter. Try on homemade pizza or on an elevated grilled cheese.
