Vivaldi Parmigiano Reggiano Cheese

Aged for 18 months, Vivaldi Parmesan Reggiano is made from unpasteurized cow milk of Emilia Romagna in Italy. The cheese is crunchy with crystals that develop around nine months of age. Reggiano is known for grating and sprinkling atop pasta, eggplant parmesan and countless other dishes.

We often use the word Parmesan for a true Italian Parmigiano Reggiano DOP, but there is a huge difference between the two. These shavings are from a 18 months old Parmigiano Reggiano that is produced in the region of Emilia Romagna in Italy.

A cheese labeled as Parmesan in the U.S. that is not genuine Parmigiano-Reggiano, but can still be a tasty cheese. There are many small and large cheesemakers making high-quality Parmesan that is obviously inspired by the real Parmigiano-Reggiano.
