Utah’s Beehive Cheese Company is famous for its rubbed-rind cheeses, flavored with espresso, tea, cajun seasoning and more. The base for all those styles is this Promontory Cheddar. Their own recipe, they call it “Utah cheddar”. It has all the familiar flavors of cheddar, but with a unique profile all its own. Slightly sweet and buttery, this cheese is approachable enough for picky cheese eaters, but sophisticated enough for an elegant cheese board or complex pairings.
It gets its name from Promontory Summit, the historic location where the Union Pacific and the Central Pacific Railroad lines linked 150 years ago. Pairing Suggestions: Medium to full-bodied red wines, port, ales of all kinds, stouts, ciders, toasted nuts, chocolate, berries, charcuterie.
