An attractive bloomy grey square of cheese that is made from pasteurized cow's milk and animal rennet and carries the name Rocket's Robiola. The small cheese receives a dusting of vegetable ash before developing a doughy, wrinkled rind.

The flavor of the cheese is tangy, bright and chalky, almost like yogurt, when it is young, but continuous to break down from week to week into a slow, oozing paste with notes of butter-roasted mushroom and toasted almond.

This gourmet cheese is made in Cedar Grove, North Carolina, by the Genke family, a first-generation farming family who started Boxcarr Handmade Cheese in 2015.

You can imagine how beautiful this cheese will look on a cheeseboard and it may trigger a good conversation about cheese. Rocket's Robiola is also great on pasta and divine on a slice of crusty bread.
