This mountain cheese is incredibly flavorful, made with raw milk from cows who graze on Alpine pastures. You can be sure this wild feed translates into a complex grassy and herbaceous cheese with a long finish. The raw milk adds meaty umami notes. It has a semi-firm bouncy texture that is perfect for melting in fondues and gratins - dishes traditional to the region.
Cheesemonger's Note: The brown natural rind on Fontina Val d'Aosta is slightly pungent, which is normal. After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.
