Sant Gil d’Albio Garrotxa Cheese
Pronounced "gahr-ROH-chah", this hard goat cheese from Spain has a rustic personality and a flavor of delicate herbal and earthy nuances.
Garroxta features depth of unique flavors; a bright tang and layers of delicate herbal and earthy nuances that is influenced by its 75 day aging process. It's full-bodied and flavorful with a long, smooth finish with brightness from the fresh milk. The texture is unlike any other goat cheese. The initial texture is firm and flaky but then it becomes smooth and creamy. Garrotxa, named after the county of origin, is a goat's milk cheese traditionally made from the milk of Murciana goats. This old world cheese was virtually extinct by the late 20th century, but fortunately it was revived by a local cooperative of farmers and cheesemakers. Its most distinctive characteristics is the velvety, grey-ish blue rind and ivory colored paste. Sant Gil D'Albio Garrotxa Goat Cheese is an exciting and flavorful Catalan cheese hailing from the beautiful Catalonia region in northeastern Spain. This infamous region is known for its proximity to both the Balearic Sea and Pyrenees Mountains; its no wonder that such an enticing cheese was created here. Garrotxa is perfect for tapas or served with crusty bread, roasted nuts, fresh fruit, and dry sherry as a post dinner dessert.
Cheesemonger's Note: Garrotxa has a rustic rind of grey with spots of green, blue, and white mold. After extensive testing we recently changed our cheese wrapping method. You'll see some loose air inside the vacuum-seal: this is intentional and what the cheese likes best. We hope you'll notice improved flavor and shelf life on this delicate cheese.
