Whole pork tenderloin is brined in a delicious mix of sea salt, brown sugar, orange zest, garlic and spices. Then it is rubbed with paprika and orange zest and hung to dry for 5 weeks. Sliced very thin it is beautiful with soft creamy cheeses. It has a pretty orange - red color on the outside.
